Following an example but taking your own path – that’s what I consider tradition

–is a quote from Thomas Mann and it’s what I would use to describe my own path as a baker. I am the scion of a long “dynasty” of Austrian bakers (we go back five generations) and I can’t put it any other way but to say that I love and live my work in equal measures. It gives me room for creativity, allows me to merge culinary traditions and ideas of sustainability and is expression of my individuality

I found a perfect representation of my own philosophy by merging biodynamic ideas, traditional ways of working with one’s own hands and the teachings of the 5 Elements from traditional Chinese medicine.

There is nothing that gives me more joy than to make someone happy with my own products.

Wine Crisps

Wine crisps made from cold-pressed grape seed flour, handmade in accordance with the 5 Elements teachings of traditional Chinese medicine, made to harmonize ideally with most kinds of wine.

Created using biodynamic ingredients and carefully prepared and baked – wine crisps are the ideal companion food when you enjoy a glass of wine but also work on their own as a healthy snack.

Bread

Denise Pölzlbauer took over the bakery from her grandfather in 2006 and is continuing the profession in the fifth generation. The old farming hause was built in 1863 and in the years leading up to 1930 it had been used for agriculture.


Our Bakery is open every Friday from 3 Pm to 6 Pm, I am looking forward to your visit!
